Halloween is notorious for one thing: candy. While it is expected for everyone to indulge every once in a while, most people choose to forget about their health completely when it comes to Halloween , using the holiday as an excuse to eat too many artificial sweets. We’ve rounded up a list of 10 healthier options for Halloween party treats that are good for you while still maintaining the spooky holiday spirit. Bell pepper jack-o’-lanterns The best way to trick (and treat) your kids into eating their vegetables this Halloween has to be these quirky bell pepper jack-o’-lanterns. Carefully use a small paring knife or cookie cutter to cut the classic jack-o’-lantern shape into fresh bell peppers. Get creative with different shapes for the mouth, eyes and nose. Stuff the tops with salad or fresh veggie sticks and serve with a side of homemade hummus or balsamic dressing. Save any extra bell peppers in the fridge to use in a stir fry or soup the next day. Chicken, bison or plant-based meatball eyeballs Swapping beef for ground chicken, 100 percent grass-fed bison or veggies and beans in a meatball recipe is a leaner, healthier alternative. Pop on some sliced olives to turn your meatballs into eyeballs, or stick thinly sliced bell peppers into the sides to make them look like spiders. Place your meatballs on a bed of your favorite homemade sauce with either zucchini noodles, spaghetti squash or brown rice pasta. Vegan cupcakes Take your favorite vegan cupcake recipe (we suggest our Vegan Pumpkin Chocolate Chip Cupcakes ) and spice it up with a little Halloween flair. Top the cupcakes with delicious Greek yogurt frosting and fresh strawberry or raspberry compote for a blood-colored statement, or mix in some all-natural food coloring. Turmeric makes a good substitution for orange food coloring and matcha for green if you want to go with a pumpkin theme. Apple monsters Cut up some green apples into slices and sandwich your favorite nut butter in between. Stick in sunflower seeds to look like pointy monster teeth and add a sliced strawberry tongue. Instead of candy googly eyes, make eyeballs out of blueberries or grapes, and stick them into the tops of the apples with toothpicks.  Pumpkin soup witch’s brew Swap a regular bowl for a hollowed-out pumpkin tureen , and add a Halloween-themed topping to go along with your pumpkin soup. Use a bat-shaped cookie cutter to create bats out of whole-grain toast for dipping, or make a spider web shape out of crème fraîche to get extra festive. To double up on the party snacks, roast the pumpkin seeds from the tureen with salt, and set them out for your guests. Mandarin orange pumpkins and banana ghosts These little mandarin orange “pumpkins” are packed with vitamin D, and the accompanying banana “ghosts” are full of potassium . But the best part about making them? It is so easy, the whole family can join in. Peel mandarin oranges and stick a small slice of celery into the top to create the pumpkin stems. Use nut butter as a glue to place dark chocolate chips as the eyes and mouth on halved bananas for a ghostly face. Veggie dog mummies Swap classic hot dogs for vegan or veggie dogs for this flaky, filling recipe. Buy a pre-made dough or make your own, and cut it into strips before wrapping it around your hot dogs for a mummified look. Place your mummies on a baking sheet and bake in the oven until the dogs are hot all the way through and the dough is golden brown. Homemade ketchup or honey mustard go great for dipping. Olive spiders Olives are high in antioxidants, healthy fats and vitamin B, not to mention they are low in cholesterol and high in fiber — a recipe for good gut and heart health. Connect two olives, one large and one small, together with a toothpick. Stick dried spaghetti pasta into the sides for legs (don’t forget to save the pasta to cook later so it doesn’t go to waste !). Candy or caramel apples Make your own caramel or candy apples using organic ingredients, and choose healthier toppings such as dark chocolate, chopped almonds, chopped dates, dried fruit or coconut flakes. For a party-friendly dish, arrange apple slices on a Halloween platter and drizzle with caramel sauce in a creepy, spider-web design. Mashed cauliflower ghosts Going low-carb this Halloween? Mashed cauliflower is a super healthy alternative to mashed potatoes. Spoon your mash into a piping bag to help shape it into ghost form and decorate with cut chives, black olives, peas or sesame seeds. Shopping smarter, eating leftovers, improving food storage and donating to food banks are great ideas for reducing food waste. There is one obvious move you can make that many people don’t realize — you can stop throwing out parts of your fruits and veggies . Strawberries This fruit is a beloved summer treat that you can eat by itself, or as an addition to salads and desserts. Even though chefs remove the stems and leaves by coring strawberries when they add them to various dishes, those parts are actually edible. A strawberry’s leaves and stem are filled with health benefits . They are a natural digestive aid, and the leaves also have vitamins that can help with arthritis. According to Live Strong, “Strawberry leaves contain tannins, bio-molecules that bind to proteins, amino acids, alkaloids and other compounds with a low pH that may place excess stress on your digestive system. Strawberry leaves may help alleviate an upset stomach, and reduce symptoms of nausea, bloating, stomach cramps and diarrhea.” If you want to use strawberry leaves, try brewing them in a tea or blending them in a smoothie. Carrots Have you ever thought about eating the leafy green tops of carrots? If you have heard that carrot tops are poisonous, that’s not true. Yes, a carrot’s leafy green top can be bitter, but it is also full of delicious nutrients. You can actually eat carrot tops raw in a salad mix. But because they are bitter, you should probably blanch them first. Another option is to saute the tops with other greens in olive oil and garlic or cook them into a soup. You can do the same thing with other root vegetables like beets, turnips and radishes. Potatoes The skin of a potato is where you will find a lot of the vegetable’s natural nutrition. Both the skin and flesh are filled with micronutrients. When it comes to vitamins and minerals, the skin has just as much Vitamin B, Vitamin C and niacin as the flesh. Additionally, the skins are a major source of iron, potassium and magnesium. However, with a little work , you can make kale stems — which are full of fiber — quite tasty. Since the stems are tough and chewy, you don’t want to eat them raw. So, first you want to blanch them. Blanching is a process where you scald the kale stems in boiling hot water before plunging it into ice water. Next, saute or stir-fry the stems to make them easier to chew. You could also opt to fry, char or pickle your stems, and then add them to rice, salads or casseroles. Cauliflower This superfood is extremely versatile and loaded with vitamins. The florets aren’t the only edible part of this vegetable . You can also eat the stems and leaves . To be honest, the stem’s skin is quite tough, so peeling and discarding that does make sense. Try adding the stems and leaves to stock and soups, or grate them for salads and slaw. Pumpkin Every part of a pumpkin is edible . That means you can eat the flowers , leaves, stems, seeds and flesh, and each type of pumpkin has its own unique flavor. Watermelon Watermelon is 98 percent water and filled with vitamin A, vitamin C, potassium, magnesium and other nutrients. The pink fruit is delicious, but you can also eat the rind . Some studies show that eating watermelon rind can help lower blood pressure, improve athletic performance and help men avoid prostate cancer and boost their libido. You can pickle your watermelon rind, turn it into a jelly or grate it for coleslaw. Not to mention, the best thing is that nothing goes to waste as you can eat the small leaves, stems and all. However, you will probably want to trim the larger ones because they are more fibrous. The Bulletin of the Atomic Scientists’ Science and Security Board has announced that the iconic Doomsday Clock is remaining at two minutes to midnight because of the dangers of climate change and the lack of progress on nuclear risks. Midnight on Doomsday is a symbolic point of annihilation and has reached the familiar point it was once in at the peak of the Cold War in 1953. The Science and Security Board made the decision to keep the clock in its current standing with the Board of Sponsors — which includes 14 Nobel Laureates — and have dubbed the situation as “the new abnormal.” In addition to climate change and nuclear risks, another factor in the decision was “the increased use of information warfare.” “It is still two minutes to midnight. Humanity now faces two simultaneous existential threats, either of which would be cause for extreme concern and immediate attention. These major threats — nuclear weapons and climate change  — were exacerbated this past year by the increased use of information warfare to undermine democracy around the world, amplifying risk from these and other threats and putting the future of civilization in extraordinary danger,” read the 2019 Doomsday Clock statement. The statement went on to say that this “new abnormal” is unsustainable and extremely dangerous, but nonetheless, the power to improve the severity of the situation remains in the hands of world leaders. The clock can move away from catastrophe if leaders act under pressure from engaged citizens. Related: Is the Green New Deal the all-inclusive climate plan we need? Rachel Bronson, the president and CEO of Bulletin of the Atomic Scientists , says that they are describing a frightening reality and the clock is the closest it has ever been to an apocalypse and should be recognized as a stark warning by all leaders and citizens of the world. The 2019 Doomsday Clock statement emphasized #RewindtheDoomsdayClock and recommended multiple action steps be taken. They included U.S. and Russian leaders resolving their differences over the INF treaty, adopting measures to prevent peacetime military incidents on the NATO borders and American citizens demanding climate action from their government . Other recommendations were for countries around the world to reduce greenhouse gas emissions in order to reach the temperature goal of the Paris climate agreement and for the Trump administration to revisit their decision to exit the plan for limiting Iran’s nuclear program. Wood floors are beautiful, but what if they could generate renewable energy too? Engineers at the University of Wisconsin-Madison have designed revolutionary wood floors that harvest energy from footsteps. Not only can they create power, but the floors are also sustainable because they utilize wood pulp that would most likely be wasted otherwise. Multiple industries end up with wood pulp as a waste product, but inside wood pulp are cellulose nanofibers that have the potential to produce a charge if they are chemically treated and encounter untreated nanofibers. Embedding the nanofibers in flooring enables those floors to transform footsteps into electricity for charging batteries or powering lights. Because wood pulp is cheap and abundant, these energy-harvesting floors could be incredibly affordable. Related: Shoe Generator Harvests Power from Walking The chemically treated cellulose nanofibers are put into what UW-Madison describes as functional portions. These thin layers are one millimeter thick or less, and several of the layers could be put into floors to generate even more energy. Associate professor Xudong Wang, co-author of a paper published by Nano Energy on the flooring, envisions the energy harvesting floors laid in malls or stadiums trafficked by thousands of people. He said in a statement, “We’ve been working a lot on harvesting energy from human activities. One way is to build something to put on people, and another way is to build something that has constant access to people. The ground is the most-used place.” Wang is developing the technology now and hopes to place a prototype in a well-trafficked place at UW-Madison. He says the technology is durable and research shows it would hold up for “millions of cycles” and could even outlive the floor. She was the first grey wolf seen in the Grand Canyon in 70 years, having traveled 500 miles from her home to the majestic Arizona canyon, and now she’s gone. Known as “Echo,” the lone grey wolf is confirmed to be the same creature killed by a hunter in Utah in December. He reportedly mistook her for a coyote.
